So now that I’m home for a bit I’m going to do some cooking! Today I will be making:
Caper and black olive tomato sauce (I’m trying black instead of my usual kalamata olives in an attempt to reduce the saltiness of the dish, though I do usually prefer the kalamatas flavour-wise. We’ll see how it goes.)
Split pea soup (I used to LOVE canned “Habitant” French Canadian style split pea soup, but it has ham in it, so I’m trying to devise a vegan version. If I get one I’ll post it here. In the meantime if you eat ham go eat some of this soup, it is beyond delicious.)
Mushroom basil tomato sauce (simple, mostly from cans, stunningly delicious!)
Mushroom enchiladas with grilled tomato sauce
Pinto beans with tomato and serranos (to accompany the enchiladas of course.)
Yes! It’s going to be a great afternoon!
